This homemade coconut and vanilla granola recipe is super easy and makes for a delicious breakfast or snack! In addition to being filling, granola has been linked to some health benefits like improved blood pressure and reduced cholesterol levels. This recipe is also full of whole grains and healthy fats (anti-inflammatory omega-3 fatty acids) along with magnesium and zinc.

Homemade Coconut and Vanilla Granola Ingredients:
- 2 cups of rolled oats
- 1/2 cup of shredded coconut (unsweetened, no preservatives)
- 1/2 cup of raw pumpkin seeds
- 2 or 3 tbsp of chia seeds
- 1/4 cup of agave nectar (or maple syrup)
- 1/4 cup of extra virgin olive oil (or melted coconut oil)
- 1 tbsp of vanilla extract
Directions:
Start by preheating the oven to 350 degrees. While the oven is heating up, line a baking sheet with parchment paper, and combine all the ingredients above into a large mixing bowl. Spread the granola mixture evenly across the pan and bake for 20-25 minutes until slightly brown, stirring once after 10-12 minutes. When the granola is slightly brown, remove the dish from the oven and let the granola cool.
To serve, I love to add a little oat milk to a cup of granola and top it with 1/4 cup of my favorite berries and a tablespoon of plain coconut yogurt.
Note: I recommend storing the granola in an air-sealed container and consuming it within a week of making it.
